Primo Hungarian Salami Knob 200g

  • 200 gm Primo white hungarian salami, thinly sliced
  • 150 gm feta crumbled
  • 2 Roma tomatoes diced
  • 2 Lebanese cucumbers diced
  • 3/4 cup of balsamic kalamata olives
  • 1/2 red onion thinly sliced
  • 1/2 cup flat parsley leaves
  • 1/2 cup baby spinach leaves
  • 1 lemon zested and juiced
  • 2 TBSP good olive oil
  • Salt and pepper

  • In a medium to hot fry pan, cook the salami until just crispy and set aside
  • Dice tomatoes and cucumber and add to a large bowl
  • Add olives and crumbled feta
  • Add spinach and parsley, salt and pepper, lemon zest and juice and primo salami
  • Add olive oil and toss to serve
