  • 8 slices Primo prosciutto¬†
  • 25 baby spinach leaves
  • 80 gm crumbled feta
  • 4 chicken breast
  • 2 TSP olive oil

  • Preheat oven to 200C

  • Coarsely chop spinach and move to a small bowl

  • Add the feta and combine cut a small pocket into the side of each chicken breast

  • Spoon in the feta and spinach mixture. Wrap 2 slices of prosciutto around each chicken breast and enclose

  • Place on a baking tray and place in the oven for 20 minutes until golden brown and cooked through

  • Enjoy

Serving Suggestion: Serve with roasted cherry tomatoes on the vine, roasted whole cloves of garlic and roasted red onion and crusty bread
