Creamy Pork and Mushroom Pizza

Method of recipe

  • Heat the 1 tablespoon olive oil in a large non-stick frying pan.
  • Add 1/2 chopped onion and 2 crushed garlic cloves, fresh thyme and 1 sliced leek, cook for about 10 minutes until very soft.
  • Then add 1 cup sliced mushroom and soften.
  • Add 1 cup pork crumbles, turn up heat and fry until golden.
  • Then add 1/2 cup cream and season with salt & pepper.
  • Meanwhile cook and pasta following pack instructions.Drain and reserve a cup of the cooking water.
  • Toss cooked pasta through the creamy pork sauce, adding a little cooking water, to help the sauce coat the pasta.
  • Garnish with parsley and Parmesan.
