Primo Short Cut Bacon Rindless 175g

  • 4 slices Primo short cut bacon rindless
  • 4 thin slices sourdough bread
  • 1/2 large firm avocado, sliced
  • 1 TBSP low fat mayonnaise
  • 1 vine ripened tomato
  • 4 baby cos leaves

  • Heat a large non-stick frypan over a high heat

  • Cook the bacon for 2 - 5 minutes on each side or until golden and crisp

  • Meanwhile toast the bread until golden

  • Spread the avocado over two slices of the toast, spread mayonnaise over the remaining two slices of toast 

  • Top avocado with 2 bacon slices, some tomato and 2 baby cos leaves

  • Top with the other slice of toast

  • Serve immediately
